Black Sesame Tart

A black sesame tart with a chocolate cookie base filled with a smooth cream cheese filling and topped with a rich, nutty black sesame ganache.


Ingredients

Crust

  • 300g cookies and cream biscuits

  • 60g butter, melted

Filling

  • 1 1/4 cup whipping cream

  • 1/4 cup sugar

  • 250 g cream cheese

  • vanilla

Ganache

  • 120 g whipping cream

  • 80 g white chocolate

  • 2 tbsp black sesame paste


Method

  • In a food processor, add the biscuits and blend until fine.

  • Add the butter and blend until combined.

  • Press into a 10 inch tart pan. Refrigerate.

  • Using a stand mixer or by hand, whisk the whipping cream and sugar until it reaches soft peaks.

  • Add the cream cheese and vanilla.

  • Spread the mixture on the tart crust, leaving around half a cup aside to decorate.

  • In a microwave safe bowl or over a ban marie, melt the white chocolate and whipping cream.

  • Once melted mix in the black sesame paste and blend with a hand blender.

  • Slowly pour the ganache on top of the cream cheese filling.

  • Refrigerate for at least 4 hours.

  • Decorate the tart using the remaining cream cheese filling.
