Black Sesame Tart
A black sesame tart with a chocolate cookie base filled with a smooth cream cheese filling and topped with a rich, nutty black sesame ganache.
Ingredients
Crust
300g cookies and cream biscuits
60g butter, melted
Filling
1 1/4 cup whipping cream
1/4 cup sugar
250 g cream cheese
vanilla
Ganache
120 g whipping cream
80 g white chocolate
2 tbsp black sesame paste
Method
In a food processor, add the biscuits and blend until fine.
Add the butter and blend until combined.
Press into a 10 inch tart pan. Refrigerate.
Using a stand mixer or by hand, whisk the whipping cream and sugar until it reaches soft peaks.
Add the cream cheese and vanilla.
Spread the mixture on the tart crust, leaving around half a cup aside to decorate.
In a microwave safe bowl or over a ban marie, melt the white chocolate and whipping cream.
Once melted mix in the black sesame paste and blend with a hand blender.
Slowly pour the ganache on top of the cream cheese filling.
Refrigerate for at least 4 hours.
Decorate the tart using the remaining cream cheese filling.
