Pear Tartlets


Ingredients

  • 1 1/2 tbsp water

  • 100 g sugar

  • 75 g cream

  • 20 g butter

  • 1/2 tsp salt

  • 6 square sheets of puff pastry

  • 3 pears

  • 1/4 cup chopped walnuts


Method

  • Preheat the oven to 180°C/350°F.

  • In a saucepan over low heat, place the sugar and water and allow the sugar to dissolve. Don’t stir.

  • Turn the heat up to medium and allow the sugar to turn into a dark amber color. Making sure to swirl the pan instead of stirring.

  • Slowly add the cream, stir, and allow to boil for 1 minute.

  • Add the butter, stir, and boil for another minute.

  • Turn off the heat and add the salt.

  • Peel the pears, cut them in half, and core them. Slice the pears from the stem down keeping it intact.

  • On a baking sheet lined with baking paper, place the puff pastry sheet followed by a tablespoon of the caramel.

  • Place one half of a pear on each sheet of puff pastry. Optionally, you can cut the excess puff pastry around the pear.

  • Spread some more caramel on top.

  • Bake for 20-25 minutes.

  • Top with caramel and chopped nuts.
