Healthy Coconut Cake
Finally! A healthy dessert that doesn’t have that healthy taste.
Ingredients
2 eggs
vanilla
2 tbsp honey/maple syrup
1/4 cup yogurt
1/4 cup milk
1 cup desiccated coconut
1/2 tsp baking powder
Method
Preheat the oven to 180ºC/350ºF. Line a 6 in round pan with baking paper.
Whisk the eggs and vanilla util fluffy.
Add the honey and/or maple syrup.
Add the yogurt and milk.
Fold in the desiccated coconut and baking powder.
Pour in the pan and bake for 20-25 minutes.
