Healthy Coconut Cake

Finally! A healthy dessert that doesn’t have that healthy taste.


Ingredients

  • 2 eggs

  • vanilla

  • 2 tbsp honey/maple syrup

  • 1/4 cup yogurt

  • 1/4 cup milk

  • 1 cup desiccated coconut

  • 1/2 tsp baking powder


Method

  • Preheat the oven to 180ºC/350ºF. Line a 6 in round pan with baking paper.

  • Whisk the eggs and vanilla util fluffy.

  • Add the honey and/or maple syrup.

  • Add the yogurt and milk.

  • Fold in the desiccated coconut and baking powder.

  • Pour in the pan and bake for 20-25 minutes.
