Maple Pudding
A classic Québec dessert made with rich maple syrup, creating a warm, fluffy cake that bakes in a maple caramel.
Ingredients
Caramel
1/2 cup maple
1/2 cup honey
1 cup whipping cream
vanilla
pinch of salt
Cake
2/3 cup sugar
1/2 cup oil
vanilla
2 eggs
1 1/2 cup flour
2 tsp baking powder
pinch of salt
2/3 cup milk
Method
Preheat the oven to 180°C/350°F.
In a pot, boil the maple syrup, honey, whipping cream, vanilla, and salt for 5 minutes. Set aside.
Whisk the sugar, oil, vanilla and egg until light.
Add the flour, baking powder, salt, and milk. Don't overmix.
Spread the batter in a 8 inch square pan. Slowly pour the sauce over the cake.
Bake for 45-50 minutes.
Enjoy warm with ice cream.
